When I decided to get the No.08 Carbone, it was a conscious decision. Very conscious. Though I am not a massive fan of high carbon steel but after all these months reading No.08 Carbone reviews, I decided I should buy, try it, patina it and use it on daily basis and see how it goes. It was an amazingly right decision. Though initially I was quite taken aback to the fact that it is a myth to get mustard here in Buloh Kasap (poor soul, me!), I immediately decided ditch the mustard polka-dots forced patina that I am really fond of and move on to the next option - lemon patina (and Holland Onion patina couple of days later!) So far, I am enjoying it so much. Seems to me, I have become to be very fond of this classic, so much so that the other knives I own - I have put them in a box and keep it nicely in a segment of my workstation last night! Excellent edge retention - after many days of daily usage on the lemons, onions, miswaks - it can still easily shave-off beard & moustache. Really a reliable workhorse, this little BadBoy. Recommended, only if you are ok to do a bit of maintenance on the XC90 blade. Otherwise there's always the Inox version! Such wonderfully sharp and reliable equipment Opinel makes! ....probably gonna propose to my kimchi making boss to get me a No.10 and 12 INOX after this.
